This rustic and precious tea comes from the same farm as our Silver Needle. The tea is hand harvested and set to dry on bamboo mats in the warm spring sun which infuse the ancestry of Fuding; the birthplace of White Tea. This tea features two green tea leaves and one silver bud. The leaves give a vegetal depth to the subtle hues of the white buds.  This is a perfect everyday white tea and infuses beautifully for a cold brew with rose petals or hibiscus. White tea is the least processed of all the teas so it maintains minerals and vitamins plus is high in antioxidants and low in caffeine.

Silver Needle is the most decadent and prized of all the white teas, it is picked by hand in the morning just as the sun has dried the last of the moisture off the still closed furry white buds. The buds are laid in shallow woven baskets to wilt under the sun. In the Song Dynasty (960-1279) white tea was revered by the royal court and given as an offering to the Emperor.  The leaves where ground into a silvery powder and whisked into bowls for the Song Tea Ceremony – this was the inspiration for the Japanese Tea Ceremony.  Japanese monks travelled to the Southern Song dynasty to learn the way of Teasim from Zen Buddhists. It is the least processed of all the teas so it is extremely rich in nutrients. High in antioxidants and low in caffeine, this is an excellent tea for those sensitive to caffeine.
