Harvest: 1993

Taste: rounded, earthy, oak, smooth

Essence: relaxed, grounded, clear

Pairings: game, dark chocolate

Brewing: Infuse 1 xiao tou cha, 200ml of purified water at 85-95º, first infusion 1 min allowing cake to unfurl, decrease time to 20 sec with subsequent infusions to taste, 4-5 infusions

Storage: dry, dark & air tight

Harvest: late 1980s

Taste: smooth, earthy, rich, divine

Essence: grounded, purified, inner strength

Pairings: rich game and meats, dark chocolate, plums

Brewing: 3g (2 tbs) per 200 ml of purified water 90-95˚, 25 sec, 4-5 infusions. Increase infusion time for subsequent infusions to taste.

To demystify the Unknown Year Puerh is a tale that goes back 25 years. In the late 80s my tea master Olivia’s father travelled to Yunnan in search of fine Puerh. What he found was this exquisite tea that has small leaves with golden needles, known as buds. The Golden buds make the Puerh extra smooth with a luxurious deep earthy taste. Olivia sold me three pounds of her father’s tea as good luck for my new tea business. I will share 2 with you now and save one for use in another 25 years.
