Pairings: game, dark chocolate

Brewing: Infuse 1 xiao tou cha, 200ml of purified water at 85-95º, first infusion 1 min allowing cake to unfurl, decrease time to 20 sec with subsequent infusions to taste, 4-5 infusions

Storage: dry, dark & air tight
